The focus is on technique, but there are a few recipes of the Memphis style to get you started and there are even a couple of grilling gems included. Step-by-step directions on a basic proven technique are given, as well as enough theory to create your own memorable barbecue.
In addition to the above, the book contains discussions on optimizing cooker design, temperature and thermometers, charcoals and various woods, cooking and smoking temperatures and techniques, tips for different types of meats, sauces, marinades and rubs with additional discussion on selected ingredients.
